CBD Recipes: Summer Salad with CBD Dressing

During the summer months, people look for lighters dishes. They want something that is going to be refreshing on those hot days. Fresh fruit and vegetables go well during the summer. A summer salad can make a great snack or even a great dinner. When the sun is out, people do not want to be in the kitchen cooking all day. This summer salad includes fresh fruits, vegetables, and full spectrum CBD oil. This CBD summer salad is light and has a tasty dressing.

Summer Salad Recipe

4 cups of fresh arugula (washed)

½ of watermelon, cut into cubes

2 apricots, cut into slices

¼ red onion, chopped up

Chopped mint leaves (amount to your liking)

2 tbsp. Feta cheese, crumbled

To make the CBD Honey Dressing the following ingredients are needed:

1/3 cup of honey

½ cup balsamic vinegar

¼ cup cold-pressed olive oil

3 tbsp full spectrum CBD oil (can be adjusted based on taste)



To make the salad portion of this dish heat up a grill pan. It should be placed over medium heat. With cooking, brush apply oil to the apricot slices. Put the apricot onto the grill pan. Cook the apricot for two minutes. Turn it over and cook another two minutes. At this time the apricots should begin to caramelize. Remove them from the grill pan and set them aside for the time being.

In a large bowl put the watermelon, mint, and the onion. Put this aside while making the honey / full spectrum CBD for the dressing.

To make the dressing:

Put the balsamic vinegar in a bowl. Using a whisk mix in the olive oil and the honey. Add the full spectrum CBD oil. Mix these all together until they are well combined. At this time additional full spectrum CBD oil can be added to give it an earthy taste. Once the full spectrum CBD oil levels are on point, season the dressing with the salt and the pepper. Add a little at a time. More salt and pepper can be added but it cannot be taken away.

In a big salad bowl place the arugula, the mint leaves, and the red onion. Add the desired amount of the CBD dressing in the bowl and gently mix the salad. Any remaining dressing can be put on the side and each person can add additional dressing if they choose. The salad should then be tossed well to make sure that the dressing gets evenly on the greens.

When serving the salad allow each person to put the desired amount on their plate. The salad can then be topped with even amounts of the grilled apricot slices, the watermelon, and a touch of the feta cheese. Additional salt and pepper can be added if needed. A person should taste the salad to see if it is called for.

This salad is light and fresh. If a person is looking to add some additional protein to the salad they can add some grilled shrimp or grilled chicken. While protein is nice this salad is great on its own. It is a nice and light dish for the warm summer.
